Healthy Diet

The Wellspring program is not like the Zone Diet, South Beach Diet, Atkins Diet or other short-term plans.  It is a scientifically based program focused on helping you learn to enjoy a new way of eating.

At Wellspring, we do several things with our menu to maximize weight loss during your Wellspring Retreat, and to maximize prospects for successful weight control in the long run:

1. Reduce fat
The delicious foods you’ll enjoy at Wellspring will contain less than 20 g. of fat. per day.

2. Reduce caloric-density of food
With more fruits, vegetables, soups, stews and other foods with higher water content, you’ll feel satisfied while consuming fewer calories.

3. Increase protein and fiber
Both contribute to satiety and overall health without adding calories.

Controlled and Uncontrolled Foods

Food at Wellspring is divided into two categories.  First, we serve controlled foods, which include entrees and snacks.  We serve entrees at breakfast, lunch and dinner, and you’ll always have a choice.  Vegetarians are welcome at Wellspring.  Wellspring entrees are not fancy.  They’re not hard-to-prepare.  In fact, they’re the same foods you’re used to eating, only prepared very differently.  For example, instead of eating burgers, we enjoy buffalo burgers, with about ¼ the fat content.  We enjoy pastas, burritos, taco salads, chicken nuggets – all prepared with different ingredients and baked or grilled, never fried.  We also serve two snacks each day, in the afternoon and in the evening.  These are healthy low-fat, low-density snacks such as frozen yogurt, fruit, fat-free brownies, and other treats.

At every meal, you’ll also enjoy a range of uncontrolled foods, including fruits, vegetables, fat-free soups, yogurts, cottage cheese, tuna salad, egg salad, and other low-density foods.  Uncontrolled foods are critical, because you won’t be successful at Wellspring or at home if you’re not satisfied after a meal.  They’re also important because they provide you with the opportunity to learn how to regulate your intake.  Working closely with your Wellspring Behavioral Coach (BC), you’ll begin self-monitoring what you’re eating, particularly uncontrolled foods.  In your time with Wellspring, you’ll develop skills for regulating your intake.
